A prologue to the history of Western food cultureof,
I'll just give you a short snippet.
Western cuisine was introduced to Japan
It wasn't accepted as part of everyday life at first.
A dish that was special and somehow distant,
Before you know it, it will become a part of your daily life...
The change is,
It's not a big decision,
I think it was a series of nameless innovations.
Extraordinary cuisine,
How can we make it a part of our everyday dining table?
Japanese people don't rush for answers.
Over time, the distance between us narrowed.
If you notice, the food is
Not a foreign culture,
It may have been a part of their lives.
As things quietly change shape,
There isn't always a clear boundary,
Only later,
"It all started back then," he says.
I feel this while tracing the history of food.
